It took more than a little sprinkling of snow and ice to keep visitors from attending the NEC Hospitality Show in January earlier this year. It is the biggest Foodservice and hospitality exhibition held in here in the UK and the exhibitors were rewarded by visitors turning up in their thousands. The Hospitality Shows are the Foodservice trade’s most important shows of the year. They are held bi-annually and the first was held on the 21st to the 23rd of January. It was a great way to kick off the New Year.

It’s nearly that time of year when lovers old and new start looking for something special to do on St Valentine’s night. So we decided to have a look around ourselves and see what some of our customers have to offer on this most romantic of all nights.
At AC Services (Southern), we’re in the business of installing and maintaining the Rational range of advanced cooking systems. Worcester’s Country House Hotel
And we’ve found a gem. Tucked away in the old “porcelain quarter of Worcester, behind the cathedral, is one of the faithful city’s best-kept secrets. The Diglis House Hotel is an imposing Grade II listed Georgian building in a stunning location by the River Severn. Built in the mid 18th century as a private residence, Diglis House was a favourite haunt of landscape artist, John Constable, and is now a popular country house hotel with a conservatory restaurant overlooking the river. Outside are riverside terraced gardens and the beautiful Seymour Suite, a dedicated conference centre with views across the Severn to the Malvern Hills.
Under general manager, Steve Pirone, Diglis House has quietly been building a reputation as the perfect setting for intimate dinner dates and uber chic weddings.
This year, Steve has put together a fantastic offer for Valentine’s night. For just £70, the lucky couples, who manage to bag one of the limited places, will enjoy a five-course dinner for two, including wine. But if you want to stay the night in one of their fabulous country-house chic rooms, just add another £15 a head and Steve will even include their legendary English breakfast. For just £100 for two, that’s got to be the perfect, recession-busting, romantic get-away.
“We are fortunate to have an amazing location here in Worcester and a really talented team who can help to make occasions like Valentine’s Day extra special for our guests,” said Steve.

“But it’s not just about great food, great service or about offering great value for money. It’s about being consistent too; having the confidence that we can deliver these high standards on every single occasion, whether it’s a Valentine’s night dinner for two or a wedding for 100.” he said.

Mass catering doesn’t automatically have to mean the type of cooking that many people associate with canteen style cuisine. Before we get tons of comments from disgruntled canteen chefs, we’d better elaborate that that’s not supposed to infer that canteens cook badly. But they do tend to get put under a lot of pressure to serve food in bulk quantities, and things like al dente pasta and vegetables, and the quality of presentation can, and often do, suffer.
Technology Marches On
We all remember the jokes we used to make about mass catering and school dinners in particular, (and we expect they’re still being made). But things have moved on big time in terms of kitchen equipment in the past 2 or 3 decades. Technology now exists that allows mass catering and fine dining to go hand in hand. The Spirit of Christmas
“Chestnuts roasting on an open fire, and Jack Frost nipping at your nose” – the words from Nat King Cole’s famous Christmas song “Merry Christmas”, a song so popular that is has been dubbed “The Christmas Song”. It somehow sums up the spirit of Christmas, with visions of a blazing log fire, crackling away, ready and waiting to warm you as you come inside from the cold after a long hard day’s Christmas present shopping.
The Hard Work is in the Preparation
Christmas is enormous fun, but there’s always so much preparation needed to make sure that you get the best out of the holiday; cards to write, presents to buy, Christmas trees to decorate, and Christmas cuisine menus to plan.
It’s All in the Planning
But if you’re a professional chef, in order to make sure that your Christmas Cuisine doesn’t disappoint, there’s something else you must plan too. You must make sure that you have plenty of oven cleaning materials in stock. Most professional ovens, (and Rational Self-Cooking-Centres in particular), have automatic cleaning programs built into their software. When used with the right proprietary cleaning materials (which ACS Southern always hold in stock), you get fantastic results which are not just cosmetically clean, but hygienically clean too.
Raising the Bar
Christmas cuisine gets more and more demanding every year. It’s partly to do with the number of cookery programs on TV, and partly to do with the huge variety of products that are available. Once, a simple roast chicken was a rare treat. Then we followed in the wake of the US and began eating turkey. Nowadays you get far more exotic combinations, like a bird within a bird, within a bird – a boned goose, stuffed with a chicken, stuffed with a pheasant, with a layer of pork, Cointreau, and orange stuffing between each layer. The bar just keeps on being set higher, especially for restaurants.
Early Birds Catch the Worms
But do yourself a favour. Don’t compound what is already a very demanding time in the kitchen by adding unnecessary work. Let your oven clean itself, and make sure you’ve got the wherewithal to do so. The most important thing is not to forget to place your order for your oven cleaning materials early. It’s a bit like the old post office motto – post early for Christmas. The problem is that so many people have a tendency to leave things until the last moment. When they finally do remember, or simply get around to doing it – it’s often too late. They’re jumping on a band wagon that is already too full to take any more.
